Winemaking Techniques

Short Maceration: The grape skins are left in contact with the juice for a brief period, usually a few hours, to extract more color and phenolics.
Fermentation: Typically carried out at cool temperatures to preserve aromatic intensity and freshness.
Aging: Some Xinomavro rosés may see a short period of aging in stainless steel tanks or neutral oak barrels, adding complexity and texture.

  1. Naoussa: Known for its structured reds, Naoussa also produces elegant and aromatic rosés that balance acidity with rich fruit flavors. 
  2. Amyndeon: This high-altitude region is renowned for its crisp and refreshing rosés, often characterized by vibrant acidity and a lighter, more delicate profile. 
  3. Goumenissa: Rosés from Goumenissa may exhibit a slightly fuller body and more pronounced savory notes, reflecting the region's terroir.

  • Kir-Yianni: Known for their "Akakies" rosé, a vibrant and aromatic expression from Amyndeon.
