Produced from organically farmed Sideritis.  Even though this is labelled as a rosè wine, it is actually produced from a white variety where there is about 12 hours of skin contact during the fermentation process.  The wine takes on a different dynamic with richer textures followed by great minerality and stone fruit flavors.
